The Matagalpa, Nicaragua 72% bar is one of five of Xocolatl’s (sweetened) single-origin dark chocolate bars. Xocolatl has partnered with Birds Georgia--a bird and people-centered conservation and advocacy non-profit organization--on this chocolate bar, particularly due to the fact that many bird species native to the Southeastern U.S. overwinter in habitats similar to the forests that produce the cacao in this bar. By selecting chocolate made from shade-grown cacao thriving in biodiverse forests, we help sustain responsible agroforestry techniques that benefit both people and animals--like the birds in your own backyard.

Flavor Notes: deep cocoa body with subtle notes of flowers and brown fruits like dates, but mostly just classic chocolate; noticeable tannins with a creamy body
